Ingredients:

  • 1 cup The Granola Girl granola

  • 2 cups fresh spinach leaves (chopped)

  • 1/4 cup dried cranberries

  • 1/4 cup vegan feta cheese (optional)

  • 2 tbsp balsamic glaze

Instructions:

  1. In a bowl, mix spinach, cranberries, and granola.

  2. Serve the mixture in small lettuce cups or on endive leaves for an elegant presentation.

  3. Drizzle with balsamic glaze just before serving.

Main Course: Holiday Granola-Stuffed Squash

Ingredients:

  • 2 small acorn squashes (halved and seeds removed)

  • 1 cup cooked quinoa

  • 1/2 cup The Granola Girl granola

  • 1/4 cup dried apricots (chopped)

  • 1/4 cup pumpkin seeds

  • 1 tsp cinnamon

  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 375°F (190°C). Place squash halves cut-side down on a baking sheet and roast for 20 minutes.

  2. In a bowl, mix quinoa, granola, apricots, pumpkin seeds, cinnamon, salt, and pepper.

  3. Fill each squash half with the mixture and return to the oven for another 10-15 minutes.

  4. Garnish with a sprinkle of granola before serving.





Side Dish: Festive Granola & Roasted Veggie Platter

Ingredients:

  • 2 cups mixed roasted vegetables (carrots, brussels sprouts, sweet potatoes)

  • 1/2 cup The Granola Girl granola

  • 2 tbsp olive oil

  • 1 tbsp maple syrup

  • 1 tsp rosemary

Instructions:

  1. Toss vegetables with olive oil, maple syrup, and rosemary. Roast at 400°F (200°C) until tender (about 20-25 minutes).

  2. Sprinkle granola over the veggies just before serving for added crunch and flavor.

Dessert: Holiday Granola Bark

Ingredients:

  • 1 cup dairy-free dark chocolate chips

  • 1/2 cup The Granola Girl granola

  • 1/4 cup dried cranberries

  • 1/4 cup shredded coconut

Instructions:

  1. Melt dark chocolate chips in a microwave or double boiler.

  2. Spread the chocolate on a parchment-lined baking sheet.

  3. Sprinkle granola, cranberries, and shredded coconut over the chocolate.

  4. Chill in the fridge until set, then break into pieces for a festive treat.

Drink Pairing: Cinnamon Granola Hot Chocolate

Ingredients:

  • 2 cups almond milk (or any plant-based milk)

  • 2 tbsp cocoa powder

  • 1 tbsp maple syrup

  • 1/4 tsp cinnamon

  • 2 tbsp The Granola Girl granola (for garnish)

Instructions:

  1. Heat almond milk in a saucepan over medium heat.

  2. Whisk in cocoa powder, maple syrup, and cinnamon until well combined.

  3. Pour into mugs and top with a sprinkle of granola for a unique twist.
